Butter Nut Soup:


500g Butter nut

1 Chopped leeks

1l Chicken stock

5ml Nutmeg

5ml Dry mixed herbs

2 cloves garlic finely chopped

250ml orange juice

Salt and pepper to taste.

1. Fry leeks and herbs until soft.

2. Add chopped butter nut

3. Add chicken stock and season to taste.

4. Cook for 45minutes.

5. Blend butter nut, orange juice and nutmeg.

6. Season to taste.
