Italian Salad

For 4 servings:

  • 230 g European salad (or other packaged salad mix)
  • 680 g spinach leaves, washed and torn into pieces, tough stems discarded
  • 48 g mushrooms, sliced
  • 150 g cherry tomatoes, halved
  • 1/2 green bell pepper, seeded and cut into 2.5 cm pieces
  • 120 ml (130 g) fat-free Italian dressing
  • 20 g cheese & garlic croutons

Combine first 5 ingredients in a bowl. Toss with dressing and croutons.
