Chicken and Mushroom Casserole


2 chickens
2 onions, sliced
5 potatoes, cubed
500ml water
salt and pepper to taste
1 pkt mushroom soup powder
1 tin creamed mushrooms
65ml mayonnaise
250ml salt and vinegar chips, crushed

· Place chicken, onions and potatoes, salt and pepper in a pot with water. Allow to cook for about 45-60 minutes.
· Shred chicken, removing skin and bones. Place in a greased casserole dish.
· Add mushroom soup, creamed mushrooms and mayonnaise to the stock, onions and potatoes in the pot. Mix well and pour over chicken.
· Sprinkle crushed chips on top.
· Bake at 180°C for about 30 minutes until brown.
Serves 8.
