Stuffed pear pies with white chocolate sauce.


6 pears

1 cup sugar

2 cups water

4 tablespoons lemon juice

200g ground almonds

4 tablespoons sugar

4 tablespoon butter

600g white chocolate, grated

800g pre-made puff pastry

1. Pre heat oven to 200°C.

2. Core pears, (keep stalks).

3. Dissolve sugar in water and bring to boil.

4. Simmer the pears in the syrup for 10 minutes or until the pears are soft, but still firm.

5. Remove with slotted spoon and leave on one side.

6. Remove half of the remaining syrup and stir grated chocolate into it until the chocolate has melted, keep warm on one side.

To make filling:

1. Blend the almonds, sugar and butter to make a paste.

2. Fill the cavities of the pears with the paste.

To make pies:

1. Divide the pastry into 6 squares and wrap each pear in a pastry blanket.

2. Bake for 15 minutes then turn down to 180°C and bake a further 10 minutes until the pastry is golden brown.

3. Serve with chocolate sauce.
